This is a known issue:

HOST-VST, extreme lag on Mac OS

@user94 mentioned (here Macbook Neo for Rack? - #9 by user94 ) experiencing some extreme UI lag using HOST VSTs on Mac OS. I was running Sequoia (M4) up until last Friday (05/01), and had never experienced any HOST/VST lag. It might have been/probably was there, but I never noticed it. Then I upgraded to Tahoe 05/01, and now all but a couple of my VSTs in HOST are borderline impossible to use. Like @user94, I can “set and forget” most things, but several do not have manual value entry option…
