You can specify different user data folders using command line parameters:

In Rack v1: https://github.com/VCVRack/Rack/blob/v1/src/main.cpp#L65-L74 -s <path>: Sets system directory. -u <path>: Sets user directory. -d: Enables development mode. Disables Plugin Manager, logs to stdout, uses cwd for system/user dirs.
