So, let me get this straight: If ch 2 had 1V and ch 3 had 4V, do you mean that ch 2 would ramp up from 1V to 4V and ch3 ramps down from 4V to 1V? Depending on the details of the patch, it may not do much for poly audio, but poly CV (V/Oct) would certainly be noticeable. And interesting.
Actually I think it should be extremely helpful for audio.
- A fast crossfade can eliminate pops that occur when abruptly switching audio signals
- A slow crossfade is commonly used with audio to fade in / fade out, or to cross fade two audio signals

as Dave mentioned above, i mainly started adding crossfading to my modules that could benefit from it in order to eliminate clicks/pops when switching audio sources too quickly, but found that longer fade time durations made for really nice smooth crossfading between sources.
so basically iām talking about crossfading āamplitudesā of the signals, not necessarily the channelās values themselves.
They should amount to the same thing.
