He’s using an expression pedal. Imagine it as a fader you operate with your foot that sends a value between 0 and 127 to a MIDI CC (in his case 94). The guitar is kind of immaterial, it’s just the audio source.

Sure. Of course you will discover what most guitarists know. It takes a lot of skill to make is sound really good.
